What is fond?
A fond or stock is a well reduced broth made from, for example, meat, poultry, fish or game, with herbs and spices added to it. A literal translation of fond is ‘basis' and that is exactly what fond is most suitable for. Nowadays, chefs in professional kitchens use fonds as a starting point for many dishes and so can anyone cooking at home.
What are all the different ways of using fond?
Fond is used for all sorts of purposes in the modern kitchen. You might be familiar with its use as a basis for sauces, but fond is also used when preparing soups or ragouts. It is also ideal as a flavour and aroma enhancer in risottos, pastas or other dishes. When preparing meat or chicken dishes and casseroles, fond certainly provides added value. You can also use fond as an alternative for oil or fat when you have a fondue. Meat can be cooked in it, but fish and poultry are also very suitable and are often a healthier option.
